I know that you can eat just about anything but does anyone really eat ground hogs? If so how do they cook them? I was just wondering what people do with the wood chucks that they shoot?

Ground Hog or Opossum.What one would be your choice? 

If I had to pick one, I would definately pick the groundhog. Opossums are nasty and they eat anything. I saw a show recently that took place in Pennslyvania and they had a roadkill cooking contest ( they could not really use roadkill ) One guy had a groundhog stew.

I pic Hog stew.However folk's in the south may differ?

Some days I could eat the a#@hole out of a skunk.  I guess if you are hungry enough you will eat anything.  Something tells me that a groundhog might be a bit tastier that an opossum.  Of course it probably all tastes like chicken.
